Salmon Sashimi and Avocado in Wonton Cupssalmonavocado

Ingredients:
  • 1 pound salmon cut into 1/4 inch dice
  • Avocado Cucumber relish (see below)
Combine salmon and relish.
Avocado Cucumber Relish:
  • 1 English cucumber, cut into 1/4” dice
  • 2 tablespoons fresh lime juice, or to taste
  • 1 firm-ripe California avocado, cut into 1/2” dice
  • 1/4 cup diced red onion
  • 1/2 cup chopped cilantro
  • salt and pepper to taste
Combine ingredient and chill.
Wonton Cups:
  • Wonton sheets of sufficient number to accommodate your guests (3” square). Prepare the wonton cups by cutting the sheets into circles using a cookie cutter or cutting the square edges off using a knife. Form the sheets into a cup by pressing them into a muffin pan (do not use a pan release spray or shortening), place another pan over the cups and cook at 375 deg for 5-7 minutes. Spoon the chilled relish into the cups.
